Tasty Tuesday - Three Christmas Cookie Recipes
It''s beginning to look a lot like Christmas - here in South Africa that means the sun is blazing, the beaches are crammed and the scent of braai is on the breeze. But with friends and family visiting in droves you can never have too many cookies on hand.

Here are three yummy sounding recipes for Christmas cookies - whip up a few batches and you can feed the hordes when they descend, or pass them around while gifts are being unwrapped.

 

Snickerdoodles

Buttery cookie topped with cinnamon sugar.

Makes about 48

Ingredients

1 cup butter or shortening
1-1/2 cups granulated sugar
2 large eggs
2-3/4 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoons baking soda
cinnamon and sugar mixed to taste (about 1/4 cup sugar to 1/2 tablespoon cinnamon is a good mixture)

 

Method

Preheat oven to 200C. Mix together butter and sugar until smooth, then add eggs, cream of tartar, and baking soda. Stir in flour until well mixed. Roll into balls about 1" in diameter and roll in cinnamon and sugar to coat. Place on ungreased cookie sheets and bake 8-10 minutes. Cookies are done when they are just barely browning.

 

7 Layer Magic Bars

Makes about 36

Ingredients

1/2 cup butter or margarine
1 1/2 cups graham cracker crumbs
1 14-oz. can sweetened condensed milk
1 cup butterscotch flavored chips
1 cup semi-sweet chocolate chips
1 1/3 cups flaked coconut
1 cup chopped pecans

 

Method

Preheat oven to 175C. Line a  baking pan with a sheet of foil, making sure to cover the sites well. Place the butter in the baking pan and melt it in the oven. Sprinkle crumbs over butter; pour condensed milk evenly on top of crumbs. Top with remaining ingredients in order listed; press down firmly with fork. Bake 25 minutes or until lightly browned. Cool. Chill if desired. Cut into bars. Store covered at room temperature.

 

Oatmeal Raisin Spice Cookies in a Jar

Makes about 36 - great gift idea!

Ingredients

3/4 cup packed brown sugar
1/2 cup white sugar
3/4 cup raisins
2 cups rolled oats
1 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon baking soda
1/2 teaspoon salt

 

Method

Mix together flour, ground cinnamon, ground nutmeg, baking soda and salt. Set aside. Layer ingredients in order given in a 1 quart "wide mouth" canning jar. It will be a tight fit, make sure you firmly pack down each layer in place before adding the flour mixture.

Instructions to attach to jar:

Oatmeal Raisin Spice Cookies

1. Empty jar of cookie mix into large mixing
bowl. Use your hands to thoroughly blend
mix.

2. Add: 3/4 cup butter or margarine softened at room temp. Stir in one egg, slightly beaten. Add in 1 teaspoon of vanilla.

3. Mix until completely blended. You may need to finish mixing with your hands.

4. Shape into balls the size of walnuts. Place on a parchment-lined cookie sheet 2 inches apart. DO NOT USE WAXED PAPER.

5. Bake at 175 degrees C for 11 to 13 minutes until edges are lightly browned. Cool 5 minutes on baking sheet. Remove cookies to baking racks to finish cooling.
