Tasty Tuesday - Honey Cake from Seaforth Farm
Our KZN area assessor Renee Vermeulen recently enjoyed a visit at Seaforth Farm and was offered a slice or two of delicious Honey Cake made by Sharneen. Trevor is a bee keeper so there is plenty of honey available on the farm! Renee begged for the recipe and today we share it with our readers...

The Rabbi''s Wife''s Honey Cake...to sweeten the New year!

 

Mix together the following:

 

  • Dry ingred.
  • 2.25 cups of flour
  • 1.5 tsp Baking Powder
  • 1.5 tsp bicarbonate of soda
  • 1 tsp cinnamon

 

In another bowl mix together:

  • Half a cup of strong tea, cooled off
  • Half a cup of oil
  • Three qtrs cup of white sugar
  • One cup of honey
  • 3 eggs

 

Method:

 

Mix the dry ingredients together, and the rest separately. Beat the tea flour etc and then combine all together.

Pour into a greased loaf tin. Bake @ 150C for 40 to 50 minutes.

Whilst still warm, pour a mixture of 2 tablespoons each of melted butter and honey over the cake.

Serve plain or buttered slices.
